THAI CHICKEN SALAD
Yields 12 servings
.
1 lime, juice & zest
½ tsp minced ginger
2 tsp soy sauce
1 tsp rice wine vinegar
1 tsp honey
1 tsp sesame oil
1 tsp chopped scallions, greens only
1 tsp minced fresh mint
Salt and hot sauce to taste
3/4 cup chicken breast, cooked and diced ½” dice
12 leaves of endive or cucumbers cut and scooped to form cups
1 tbsp chopped peanuts (optional) and/or sesame seeds
.
-In a small mixing bowl, combine all ingredients except the chicken, stir until blended.
-Add chicken and toss to coat. Cover and refrigerate several hours for more intense flavor.
-To serve, fill endive leaves or cucumber cups with one tablespoon of chicken mix.
-Garnish with peanuts, sesame seeds and additional sprigs of herbs.
