I had the privilege of visiting the 9/11 Memorial this past summer. I was surprised at how much it affected me even though I did not personally know anyone who passed during the attacks. The way that this tragedy affected our nation must never be forgotten. ~ Mike Cochran

Sankoty Lakes is excited and honored to introduce Joshua Lanning as our new Executive Chef!
A world-class chef with both a local connection and a coast-to-coast pedigree, Chef Josh will be developing our new on-site restaurant inside the Sankoty Pavilion this spring.
The ‘Woolly Bugger’ – named after a popular bait used in fly fishing – will feature both indoor and outdoor dining, with service to our large outdoor patio that affords gorgeous views, particularly at sunset.
Joshua Lanning, 36, is a 2003 graduate of Peoria’s Richwoods High School. Early in his career, he worked in the kitchens of the late, great June in Peoria Heights and The Harvest Café in Delavan.
Those stops were bookended by a degree from the prestigious French Culinary Institute in New York and stints at some of the finest restaurants in the world, including SingleThread in northern California and Noma in Copenhagen, Denmark.
Lanning most recently worked as the culinary director for award-winning Chef Sean Brock in Nashville, helping build a team, develop the menu and prepare for the openings and operations of three new restaurants.
His around-the-globe tour of kitchens has prepared Lanning well for his new position, which requires him to wear multiple hats. Indeed, he’s had just about every job you can at a restaurant, from cooking to beverage selection, from hiring and managing staff to menu development, from working at an established, Michelin three-star eatery to building a dining room from the ground up.
The Woolly Bugger will represent a bit of a culinary turn for Lanning, as it will boast a Wisconsin supper club vibe.
“I don’t cook for my ego,” said Lanning, explaining that the menu at the Woolly Bugger “will be pretty approachable ... I’m thinking of the things I know my parents loved to eat.”
Expect a relatively consistent, comfort food menu with seasonal changes – an array of sandwiches for lunch, a relish tray, various salads, signature soups. Vegetables are a Lanning specialty, and they’ll get a lot of emphasis.
Anticipate some creativity with the evening entrees. Lanning is “a huge fan” of prime rib, and a freshwater seafood also will be a staple.
The menu likely will evolve over time, as it does at any quality restaurant. Lanning said he loves cooking over fire, and barbecue is a favorite. There will be a smoker on the premises. Who knows, at some point visitors may even be able to bring in their own fresh catch of the day and have it expertly prepared.
Everything will be fresh, not frozen, and a chef who grew up in a farm-to-table tradition will have a relationship with local farmers.
Lanning hopes to open the Woolly Bugger in late spring, and ultimately, he wants the restaurant to become one with the community.
“I hope it becomes a place where it’s worth the 10- to 15-minute drive,” he said. “I just hope it’s as successful and beautiful as the surroundings ... a place to come and gather and enjoy the meal and go back out to enjoy the lakes.”
