Ethan Williams was one of the sweetest people we have ever met. The kind of kid so nice that he immediately made everyone else around him nicer as well. He was bright and funny and kind and genuinely interested in his coworkers. We can not begin to imagine how his family and closest friends are feeling. These CDK ribeyes have already been DRY aged 21 days, today we dipped them in butter infused with @oldforester STATESMAN bourbon to WET age them another 45 days until NYE @beholderindy or until we simply can’t wait any longer. We’ve been obsessed with chili lately... from our cook off with homies a few weeks ago, @joseysmodernlife excellent brunch version @milktoothindy, to the traditional five way a couple Wednesday’s passed... NOW this @beholderindy dinner version with red wine braised beef shank chili, @bettinipasta rigatoni, red beans, sweet onion and aged cheddar.
