The 25th Project and Chef Mike @michaelkullback, who has become a dedicated chef for T25P over the last year, has been cooking up enough food to make 1200 warm meals to distribute to the homeless in shelters and camps since yesterday. While Cookology staff cannot participate in the fun of cooking—we really miss all our volunteers—this year due to Covid, we were happy to provide almost 150lbs of food and the use of our kitchen at Dulles Town Center to Chef Mike and his group of helpers.
Please make a donation to T25P to help feed the growing population of homeless and food insecure around the DMV.
Happy Thanksgiving everyone! Many blessings to those who are suffering at this time. We pray for healing.
Biggest worry with roasting a turkey is drying it out. Best tip against that is a large turkey needle injector thingy. Fill with chicken stock or turkey stock and inject into breast and thigh meat. No matter what happens with your oven, whether it’s too hot, or you forgot to turn on the timer or whatever...the bird is going to be moist and amazing. Here we mixed chicken stock with a little butter, because why not. Then melt butter and pour on top OR do the easy thing and use a decent can of cooking spray —that’s just olive oil, and spray the entire top of the bird. If the skin gets too brown cover loosely with foil, and then go make a cocktail. In 3-4 hours, or whatever the Turkey package says, you’ll have cooked a turkey! Bravo! (Tip if you’re thawing it—fill your sink with COLD water and plunk turkey in for 9-11 hours. Don’t forget to take out the neck and giblets—wait did we just lose you? It’s really gross. You got this!)
