Yum! Check out this delicious homemade Zesty Avocado Ranch recipe!
Ingredients:
1 medium sized ripe avocado
1/2 cup unsweetened non-dairy milk or water
3-4 Tbsp white vinegar
1 small clove garlic chopped or 1/2 teaspoon garlic powder
1 Tbsp chopped onion or 1/2 teaspoon onion powder
1.5 Tbsp chopped fresh dill or 1/2 teaspoon dried dill weed
1 Tbsp minced fresh chives or 1/2 teaspoon dried chives
1/2 tsp salt
1/8 tsp freshly ground pepper
Directions:
1. Place all ingredients in a high speed blender or food processor and blend until smooth.
2. Adjust liquids according to desired thickness.
Note: Serve this delicious and healthy ranch dressing with a salad, on a burger, with tacos or as a dip. This will last in the fridge for 3-4 days. Just shake or stir to combine if separation occurs.

Mmmmm! Homemade Chia Seed Pudding!
Ingredients:
2 cups unsweetened non-dairy milk (almond, soy
or coconut work well)
1/2 cup chia seeds
1 1/2 tsp vanilla extract
1/4 tsp salt
1 tsp stevia
Toppings: Fruit (berries, bananas or any sliced
fruit) and chopped nuts
Instructions:
1. In a medium sized bowl, whisk together the
non-dairy milk, chia seeds, vanilla extract salt
and stevia.
2. Cover bowl and let sit for at least 8 hours
(overnight). As the chia seeds soak, they will
plump and release a gel that will thicken mixture
into a “pudding”.
3. When ready to eat, top with 1/2 cup fruit and 2
tablespoons nuts for each serving.
Note: The pudding on it’s own will keep in the
fridge for up to a week. Wait until serving to top
with fruit and nuts. Can be served for breakfast or
dessert.
