A great ceviche is all about freshness, balance of ingredients and timing. Our Ceviche Mixto Campechano is made with ono, shrimp and squid tossed with red onion, avocado, cherry tomato and burnt tomato agua de chile (fresh lime juice, ginger, garlic, celery, red onion, cilantro and rocoto).
