Best party dip ever! Our ranges make it easy with an XLO setting to gently melt cheeses without scorching! Our XHI setting makes browning super quick! Come see our Demo Kitchen and check it out for yourself!
BOUDIN QUESO RECIPE:
2 tbs butter
1 lb white American cheese
1/2 cup half & half or whole milk (stir in more if the dip gets too thick)
1 small can Mexican green chilis
1 tbs cajun seasoning (or to taste)
1 lb fresh boudin
In a stockpot, melt the butter, add the cheese and half & half, stirring and melting gently on XLO heat to prevent scorching. You can also use a double boiler for this part. When the cheese is melted and smooth, add chilis and seasoning. Stir until smooth. Add half & half or milk if the dip gets too thick. In a separate skillet, brown fresh boudin (out of the casing) until cooked through, breaking up any large chunks. Stir browned boudin into cheese dip, reserving some to garnish on top of dip. Keep warm until ready to serve.
