For today’s #tastytuesday we decided to make eating veggies fun! Why eat zucchini chopped up and boring when you can turn it into a receptacle for carrying your favorite filling? 😆 We hollowed our our zucchini and filled it with a mixed sauté of ground beef, onion, chopped tomatoes and the inside of the zucchini that we chopped up. (Flavored with onion powder, garlic powder, chile powder and cumin.) Roast your zucchini boats in the oven for about 20 minutes on 350, then serve filled boats on top of rice and beans with a little sour cream, cheese and salsa for a twist on #tacotuesday 😋

Happy #TastyTuesday!! What’s your favorite pre or post workout snack? We love these vegan and gluten free #energybites. They taste like cookie dough and give us the energy we need before a heavy workout. The recipe makes about 14-17 balls. (If you make 17, each ball is about 55 calories) Here’s the recipe:

In a good processor, Pulse 1/3 cup raw oats with 2/3 cups raw cashews until a sort of grainy flour is made.

To that, slowly pour in 3 Tablespoons maple syrup (or 2 TB agave and 1 TB maple) and 1 ts vanilla.

In a bowl stir in about 1/4 cup mini vegan chocolate chips.
