October 29th is the next Cook a Fish, Give a Fish Class with Max Peterson Featuring Bluefish!
"The flesh [of bluefish] is relatively firm with an easy flake that reveals moist musculature. Fresh filets will have an animated aroma and an energetic flavor, but that's because its's sharp, not strong. Its excellent taste is smart, well balanced, and highly aromatic, with notes of herb, citrus and brine. It is also somewhat gamey in flavor like Sockeye Salmon and is punctuated by a slight sourness. The brine flavor fades into a lingering malty or creamy aftertaste that is tart with a touch of natural smokiness." - Barton Seaver describing bluefish in his book, American Seafood
This class will focus on bluefish, a native and delicious fish that sometimes gets a bad rap as being "too fishy" but when prepared and handled correctly is absolutely wonderful! During this class chef Max Peterson of Hemenway's Restaurant will guide you through the process of turning Bluefish into a delicious dinner that will make it one of your new favorite fishes!
