First special of the week!
Even though there’s a special place in our hearts for etouffee, living in north Texas isn’t conducive to bringing in fresh seafood...you know...we’re not close to oceans and stuff.
We played off of it and came up with a “BBQ etouffee.” We start with a traditional roux base seasoned with our house rubs then go with smoked sausage and chopped brisket in that super savory gravy served over a bed of white rice. From there, we hit it with a garnish of scallion and Voodoo chips. We may even get a little wild and do a garlic bread. Perfect cold weather dish that stays in the BBQ realm while letting us stretch our legs in the kitchen!
Starting a small business is hard. One thing money won’t buy is support and that’s what you need an abundance of in the beginning stages. These guys have been behind us since the day we started this adventure and we can’t say enough about the McKinney BBQ team. Absolutely amazing people!!!
Also, Akeem Smith (former owner of The Chicken Box) was in the kitchen last night. The specials were rolling out next week are going to be LEGIT.
Hey friends! Our Concert season is entering in its final month, we are trying to finalize the last few shows as we speak!! We are trying to lock down something for the 21st so that we finish with a big weekend! ( we will still do some acoustic stuff and if we see the weather is gonna be nice have some stage concerts but as far as the bigger shows its to hard to book to far out not knowing the weather! Of the list below Who would you chose!!! The list below is who is available that we have to put in an offer on! If its not on this list its not an option at this time! Whats a super bowl without wings?
We start with a jumbo wing and brine them for 6 hours to impart a little flavor into the meat itself. Next, on to the smoker to grab a little of that Post Oak smoke. Toss it in a super light batter for some texture and flash fry them to get that perfect crisp bite. Finally, toss them in our house made traditional buffalo, Scorpion pepper buffalo (HOT!!!), or our BBQ sauce.
