La Margarita is celebrating its 30th year in Salem. Thank you to all our customers. Pedro Rosales opened La Margarita Co. at its current address in August of 1984. The restaurant offered the first mesquite grilled food in Salem and soon became well known for it's specialty Enchiladas Suizas and other dishes from Central Mexico which are based on family recipes and are prepared daily, with fresh ingredients. Over the years many innovative dishes have emerged from the mesquite grill as Pedro and Executive Chef Javier Muñoz have collaborated and drawn on their yearly travels to Mexico for inspiration. The whole Rosales family is involved in the day to day operations. Pedro, Xochitl Muñoz, his daughter, and Javier Muñoz, Chef and son in law, can be found at La Margarita most days.
