WELLNESS RECIPE WEDNESDAY!! Zucchini Tacos Ingredients: 1/4 cup olive or coconut oil 2 medium zucchini cut into 1/2 inch rounds 1/2 tsp ground cumin 1/4 tsp ground coriander 1 cup finely chopped white onion 2 tsp minced garlic 1 tbsp tomato paste 1 can black beans, rinsed and drained 8 corn tortillas Sour cream, crumbled goat cheese, carrots, jalapenos, sliced radishes, lime wedges, salt and pepper to serve TO PREPARE: In a large skillet, heat oil over mediumhigh. Add zucchini in a single layer; sprinkle with cumin and coriander. Cook, turn once, until golden, about 8 minutes. Transfer to a plate. Season with salt and pepper, cover to keep warm. Reduce heat to medium and add remaining oil, onion and garlic, cook, stirring, until softened, 5 minutes. Add tomato paste, cook 1 minute. Add beans and 1/2 cup water, season with salt and pepper, and simmer, smashing some beans with a spoon, until heated through. Toast each tortilla over a burner, fill with zucchini, bean mixture and other toppings as you choose. Enjoy!!

Sheet-Pan Mushroom Frittata Ingredients: 1 lb. sliced cremini mushrooms 3 Tbsp. olive oil 1 tsp. fresh thyme leaves 1 large clove garlic, grated 18 eggs 3 cups watercress 8 oz. cheese TO PREPARE: Heat oven to 450° F and toss mushrooms, olive oil, thyme and garlic on a sheet pan. Roast until softened, 8 to 10 minutes. In a large bowl, beat eggs. Stir in watercress, 2 tsps. salt and 1 tsp. pepper; then pour over mushrooms. Scatter cheese on top then bake until just set, about 11 minutes. Serves 8 to 10. Enjoy!!

WELLNESS RECIPE WEDNESDAY!! Green eggs & ham. You'll need: 1/2 cup all purpose flour, 1/2 tsp salt, 3 large room temperature eggs, 3/4 cup room temperature whole milk, 3 tbsp room temperature unsalted butter, 3 tbsp chopped chives, thinly sliced deli ham, dijon mustard, black pepper. To prepare: Preheat oven to 425, with a medium cast-iron skillet inside on the central rack. In a bowl, whisk together flour and salt. Puree eggs in a blender until pale and frothy. Add flour mixture, milk, and chopped chives. If you puree the chives prior to adding to the blender, it will give the batter a subtle onion flavor and will tint it green. Puree until smooth, about 30 seconds. Add butter to skillet in the oven. When it melts and sizzles, pull out the rack and quickly pour the batter into the center of the skillet. Bake until puffed, golden brown in places and crisp around the edges; about 18-22 minutes. Slice into wedges. Serve while still warm from the oven, topped with more chives, the ham, dijon mustard, and some black pepper. Enjoy!!

WELLNESS RECIPE WEDNESDAY!! Turkey-and-Rice Meatballs You'll need: 1 lb ground turkey, 1 1/4 cups cooked long-grain white rice; cooled, 1/4 tsp black pepper, 5 tbsp coconut oil, 1 1/2 tsp salt, 1/2 cup well-stirred tahini, 6 tbsp fresh lemon juice (from 2 lemons), 2 tsp pure maple syrup, 1 10 ounce bunch curly kale; stemmed and torn into bite-sized pieces, 1 red apple; thinly sliced. To prepare: Preheat oven to 425 and line a rimmed baking sheet with aluminum foil. Stir turkey, rice, pepper, 3 tbsp oil, and 1 tsp salt in a large bowl until combined. Lightly coat baking sheet with oil. Shape mixture into 12 (2 inch) meatballs and place on baking sheet. Bake until light golden, about 10 minutes. Increase oven temperature to broil. Broil meatballs until golden brown and internal temperature reaches 165. Meanwhile, whisk tahini, lemon juice, maple syrup, 2 tbsp water, remaining 2 tbsp oil, and remaining 1/2 tsp salt in a small bowl until smooth. Place kale in a large bowl. Drizzle with 1/2 cup tahini dressing and massage into leaves with your hands. Toss in apple. Serve meatballs drizzled with remaining tahini dressing alongside kale salad. Enjoy!!

WELLNESS RECIPE WEDNESDAY! Healthy Chocolate Chip Cookies You'll need: cashew butter coconut sugar egg applesauce almond flour dark chocolate chips vanilla extract baking powder salt To prepare: Set the oven to 350 degrees. Combine cashew butter, coconut sugar, egg, applesauce, and vanilla extract until smooth. Then add in the dry ingredients and combine until smooth. Almond flour, baking powder, and salt. Stir in the chocolate chips. Chill the dough in the refrigerator for 20 minutes. Remove from the fridge. Scoop about tablespoon sized balls onto a greased or parchment paper lined baking sheet. The dough will be a little sticky, but do your best to flatten into cookie shapes. Optional (but highly recommended!): add some more chocolate chips on each cookie. Sprinkle some salt on each cookie. Bake for 10 minutes. Enjoy!!

Lentil Bowl Ingredients 2 tbsp extra virgin olive oil or coconut oil 2 medium or 3 small onions, chopped 3 cups cooked lentils, drained 1 clove garlic, minced, or more to taste 1 tsp unrefined sea salt TO PREPARE: Heat oil in a large skillet over medium-low heat, making sure oil never smokes. Add onions and sauté until lightly browned, 10 to 15 minutes. Place onions in a medium bowl and add lentils, garlic and salt. Mix well and serve warm. Enjoy!!

WELLNESS RECIPE WEDNESDAY!! Pork & Black Beans with Fresh Salsa Ingredients 1 15.5 ounce can black beans, rinsed 3/4 cup fresh orange juice 3/4 cup low-sodium chicken broth 3 cloves garlic, chopped 1/2 tsp ground cumin 1/2 tsp dried oregano 1 1/2 pounds boneless pork shoulder or butt, trimmed and cut into 2 pieces 1 cup long-grain brown rice Fresh salsa, chopped avocado, and hot sauce for serving TO PREPARE: Combine the beans, orange juice, broth, garlic, cumin and oregano in a 4 to 6 quart slow cooker. Season the pork with 1/2 tsp salt and 1/4 tsp pepper and place on top of the liquid. Cover and cook until the pork is tender, on low for 7 to 8 hours or on high for 5 to 6 hours. Transfer the pork to a bowl and shred the meat, using 2 forks; return it to the pot. Twenty minutes before serving, cook the rice according to the package directions. Serve topped with the pork mixture, salsa, avocado and hot sauce. Enjoy!!

Add tempeh; cook about 7 minutes or until golden, stirring occasionally. Remove from saucepan. In the same saucepan, heat the remaining 1 1/2 teaspoons of oil over medium heat. WELLNESS RECIPE WEDNESDAY! Baked Eggs, Tomatoes, & Chilies Ingredients 3 cloves garlic, divided 3 pounds ripe plum tomatoes, cut into 1/2-inch pieces 1 medium onion, finely chopped 4 tbsp coconut oil or extra-virgin olive oil, divided 2 tbsp chopped fresh parsley, plus more for garnish 3/4 tsp sea salt, divided 1/2 tsp ground pepper, divided 2 large green chiles, finely chopped 1 tsp ground cumin 1/3 cup chopped fresh basil 1/2 cup crumbled feta cheese 4 large eggs Hot sauce for serving TO PREPARE: Preheat oven to 450° F. Slice 2 garlic cloves. Toss with tomatoes, onion, 3 tablespoons oil, pars-ley and 1/4 teaspoon each salt and pepper in a large bowl. Spread evenly on a large rimmed baking sheet or in a shal-low roasting pan. Roast until the tomatoes are shriveled and browned, about 45 minutes. Chop the remaining garlic clove. Heat the remaining 1 ta-blespoon oil in a large skillet over medium heat. Add the garlic and chiles; cook, stirring for 2 minutes. Add cumin and cook, stirring, for 30 seconds. Stir in the tomato mix-tures, the remaining 1/2 teaspoon salt and basil. Bring to a simmer and cook, stirring occasionally, until the tomatoes are mostly broken down, 6 to 8 minutes. Make 4 deep indentations in the sauce with the back of a spoon and carefully crack an egg into each. Sprinkle the eggs with feta and let stand, covered, for 2 minutes. The eggs will continue to cook a bit as they stand. Garnish with parsley and serve with the hot sauce, if desired. Enjoy!!

Curried Vegetable Soup Ingredients 3 tsp coconut or olive oil 1 8-oz pkg tempeh cut into 1/2-inch cubes 1 leek halved lengthwise and thinly sliced (about 1/3 cup) 1 tbsp curry powder 1 32-oz carton vegetable broth 1 14.5-oz can diced fire-roasted tomatoes, undrained 1 cup water 1 1/2 cups kale, stems removed and coarsely chopped 1/2 cup quinoa, rinsed and drained 1/2 cup sliced carrot 1/2 cup snipped fresh basil Sea salt TO PREPARE: In a large saucepan heat 1 1/2 teaspoons of the oil over medium-high heat. Add tempeh; cook about 7 minutes or until golden, stirring occasionally. Remove from saucepan. In the same saucepan, heat the remaining 1 1/2 teaspoons of oil over medium heat. Sleep is an essential time for the body to recuperate. During the non-rapid eye movement (NREM) sleep stages, heart rate slows, blood pressure drops, and breathing stabilizes. These changes reduce stress on the heart, allowing it to recover from strain that occurs during waking hours. Without sufficient nightly sleep, a person doesn’t spend enough time in the deep stages of NREM sleep that benefit the heart. The same problem can affect people whose sleep is frequently interrupted. As a result, chronic sleep deprivation has been linked to numerous heart problems including high blood pressure and heart attack.

Best-Ever Keto Mac & Cheese INGREDIENTS FOR THE MAC & CHEESE Butter, for baking dish 2 medium heads cauliflower, cut into florets 2 tbsp. extra-virgin olive oil Kosher salt 1 c. heavy cream 6 oz. cream cheese, cut into cubes 4 c. shredded cheddar 2 c. shredded mozzarella 1 tbsp. hot sauce (optional) Freshly ground black pepper FOR THE TOPPING 4 oz. pork rinds, crushed 1/4 c. freshly grated Parmesan 1 tbsp. extra-virgin olive oil 2 tbsp. freshly chopped parsley, for garnish DIRECTIONS Preheat oven to 375° and butter a 9”-x-13” baking dish. In a large bowl, toss cauliflower with 2 tablespoons oil and season with salt. Spread cauliflower onto two large baking sheets and roast until tender and lightly golden, about 40 minutes. Meanwhile, in a large pot over medium heat, heat cream. Bring up to a simmer, then decrease heat to low and stir in cheeses until melted. Remove from heat, add hot sauce if using and season with salt and pepper, then fold in roasted cauliflower. Taste and season more if needed. Transfer mixture to prepared baking dish. In a medium bowl stir to combine pork rinds, Parmesan, and oil. Sprinkle mixture in an even layer over cauliflower and cheese. Bake until golden, 15 minutes. If desired, turn oven to broil to toast topping further, about 2 minutes. Garnish with parsley before serving. Enjoy!!

Blackberry Glazed Chicken INGREDIENTS 1 (6-ounce) package blackberries 1/4 c. water 2 tbsp. white wine vinegar 1 tbsp. sugar 2 tbsp. cold butter 1 tbsp. whole-grain mustard 4 chicken thighs 4 drumsticks Kosher salt and black pepper Fresh, flat-leaf parsley DIRECTIONS Heat grill to medium. Combine blackberries, water, white wine vinegar, and sugar in a small saucepan; simmer, mashing occasionally, until liquid is reduced to about 2 Tbsp., 18 to 20 minutes. Stir in butter and whole-grain mustard. Transfer half the glaze to a bowl; reserve. Meanwhile, pat chicken thighs and drumsticks dry; season with kosher salt and black pepper. Grill, skin-sides up, covered, 15 minutes. Uncover, baste with some of the glaze and grill, turning and basting occasionally, until cooked through, 10 to 12 minutes. Sprinkle with fresh flat-leaf parsley and serve with remaining glaze. Enjoy!!
