Chef Dwight Benjamin’s Recipe
“BENNY’S PASTA SALAD”
Ingredients:
One (1) lb. box of Penne or Rigatoni Pasta �
One head of fresh broccoli, three to four (3-4) stalks of celery, small container of cherry tomatoes �
One small can/jar of Black olives, mushrooms, pimentos �
One half red onion and three-four (3-4) green onions stalks (fresh) �
One half jar of sundried tomatoes �
Parmesan cheese, sharp or 3 cheeses, diced or shredded �
Two-three (2-3) cups of Golden Italian Salad Dressing (Only found @ Sam’s Club) �
2 to 3 tablespoons of sugar �
1⁄4 teaspoon of salt and black pepper �
Small container of fresh basil
�
Boil pasta in one (1) gallon of water. Cook until tender or done.
Chill pasta in ice bath or cold running water in a strainer, and once cooled, place in a large bowl!
Add to the Pasta in the large bowl:�
Drain all liquid or juice from pasta and vegetables
1⁄2 cup sliced celery, tomatoes, black olives �
1/3 cup green and red onion, diced or chopped �
1⁄4 cup chopped sundried tomatoes �
1⁄2 cup diced pimento
1/2 cup fresh basil �
1 lb. of sharp or 3 cheeses diced or shredded �
1 cup parmesan cheese �
Golden Italian salad dressing �
Stir until mixed and Enjoy!!!!!

Pastor Chef: Simple Peach Cobbler
Ingredients
Four cans of 15 oz. cans of Peaches
Four Pie crust
One cup of sugar
One cup of Brown Sugar
One teaspoon of cinnamon
One teaspoons of Nutmeg
Place Peaches, Sugar, brown sugar, cinnamon nutmeg in a saucepan on medium heat for 15
mins.
Spray your dish in preparation for the cobbler (Butter spray)
Spread one Pie crust (1) on the table, then place in the dish
Spread the second Pie crust, then place in the dish
Add the peach mixture, then place pie crust # three and pie crust # 4
Cut sides off and cut into strips and place on the top of the pie crust
Melt three tablespoons of butter and brush on the top of the pie crust
Bake at 350 degrees for one hour and 15 mins!
Enjoy!!!!!

Apple Dumplings
1 large Granny Smith apple - peeled and cored 1 can refrigerated crescent roll dough
1/2 cup butter (lstick) 3/4cups white sugar
1/2 teaspoon ground cinnamon 6 oz Mountain Dew
1. Preheat oven to 350 degrees.
2. Grease 9 x 13 inch pan.
3. Cut apple into 8 wedges.
4. Separate the crescent rolls into triangles.
5. Roll each apple wedge into crescent dough starting with smallest end.
Bake 35-40 minut es or until browned. Makes 8

Learn how to bake Coconut Bread like a Pro with Pastor Chef!
Grenell Walcott’s
Sweet Bread (Coconut Bread)
Ingredients
4 ½ cups of all-purpose flour
4 ½ teaspoon baking powder
1 teaspoon of salt
2 cups of Pure Cane Sugar
½ cup of raisins or any type of dry fruit
2 – 6 oz. pkgs. of fresh frozen coconut (thawed)
¼ teaspoon of ground cinnamon
¼ teaspoon of grated nutmeg
2 eggs beaten
¾ cup evaporated milk
2 teaspoons of vanilla extract
½ lb. (2 sticks) of melted butter (unsalted or salted)
Preheat oven to 350 degrees,
In a large bowl mix, flour, baking powder, salt, sugar, cinnamon, nutmeg together.
Next add in coconut and dried fruit and mix well.
Add all remaining ingredients and mix well.
Grease loaf pan if used, if using cupcake paper cup liners, no greasing of the pan is needed.
Baking time 20-30 mins.
The last 5 minutes of baking add a “Sugar Glaze”
Ingredients
1 teaspoon of Pure Cane Sugar
1 tablespoon of warm water
Enjoy!

“4” Ingredient Blueberry Cobbler
Ingredients
3 cups of Blueberries (fresh or frozen)
½ cup of sugar or sugar substitute
1 Box of lemon cake mix
½ cup of unsalted butter
Preheat oven to 350 degrees
Spray a 9x13 casserole dish with nonstick cooking spray.
Mix together the blueberries and sugar, then spread the blueberry and sugar mixture into the bottom of your baking dish.
Whisk together the cake mix and melted butter, sprinkle over the blueberries.
Bake at 350 degrees for 40 minutes …..and Enjoy!!!!! With your favorite Ice Cream
You can substitute with peaches and use yellow cake mix
