Looking to kickstart your day with a fruity smoothy packed with protein? Follow Rick's go-to recipe. It only takes a few minutes to prepare and serves four 16oz glasses of yummy goodness:
- Two cups cold water
- Two apples, cut into 8 pieces
- Two bananas
- One 14 oz package of silken tofu
- Flax seed
- 1-3 cups frozen mixed fruit (e.g.; blueberries, raspberries, strawberries)
- Fresh mint to taste for a bit of zing
1. Add water to a Vitamix or blender.
2. Slice the apples into 1/8ths and add to the blender. I use the whole apple, seeds and all, but you can core the apples if you prefer.
3. Pulse or blend the apples at 1/2 power until they mix easily. (this prevents the apples from getting wedged in the blender)
4. Add the bananas, tofu, flaxseed, fruit, and mint.
5. Blend for a minute or until it reaches your desired consistency.
Tip from Rick: "I store extra smoothies in 16 oz mason jars in the fridge, where they last for a day or two. Feel free to substitute other fruit (tropical blends with pineapple, mango, strawberry; grapes add sweetness). Before we decided to eat a plant-based diet, we used yogurt instead of tofu. We also enjoy baby spinach or kale in the mix from time to time… there are no bad ingredients so have fun and experiment!"
