At McLean, food is more than a meal. Our expert culinary team is constantly looking for ways to expand and provide more options, focus on health trends and embrace alternatives. Chef Karen Pelletier is sharing her favorite seasonal healthy dish. Let us know if you try this at home! Instructions: Heat heavy saucepan over medium heat. Add margarine, celery, onions and peppers. Saute for 1 minute. Add brie and Old Bay seasoning. Cook for 2 to 3 minutes or until cheese is melted. Add flour. Stir to combine. Cook for 3 to 4 minutes, stirring constantly and avoiding sticking. Add milk, and reduce heat to low. Simmer for 5 minutes. Add crab, sherry, salt and pepper. Stir to combine. Simmer for 5 minutes. Serve warm and enjoy!

St. Patrick's Day was a fun-filled event from start to finish all around campus...the jolly trolley, delicious home-cooked meals and even Irish chair step dancing!
Residents have become quite tech savvy and are using technology to connect with friends and families, attend virtual book clubs and events, and to speak with their doctors. This whimsical yet poignant tapestry honors every aspect of our year-long journey together, and embodies the teamwork and spirit of every individual across every department.
