Dimas Garcia is a boutique, small-scale coffee farmer from the Chalatenango region of El Salvador. This micro-lot represents all of Dimas' Pacas coffee for the year. Pacas is a genetic varietal of coffee that originated in El Salvador this varietal seems to peak in performance in the mountains of Chalatenago where Dimas grows and harvests this unique offering on his two-hectare farm. He rides his motorcycle the roughly four-minute commute from his home to his farm to maintain the crops in the off-season and to pick and process coffee during the harvest.

Healthcare workers receive free brewed coffee drinks starting on January 4 through January 31 2021 at participating coffee shops in appreciation for their tireless work on the front lines of the pandemic. Dimas Garcia is a boutique, small-scale coffee farmer from the Chalatenango region of El Salvador. This micro-lot represents all of Dimas' Pacas coffee for the year. Pacas is a genetic varietal of coffee that originated in El Salvador this varietal seems to peak in performance in the mountains of Chalatenago where Dimas grows and harvests this unique offering on his two-hectare farm. He rides his motorcycle the roughly four-minute commute from his home to his farm to maintain the crops in the off-season and to pick and process coffee during the harvest.

A coffee close to our hearts, we're beyond happy to welcome back El Guayacan from Peru! As part of the Cooperative de Servicios Multiples Aprocassi, the combined lots are named after the spectacular Guayacan tree, found generously dotted along the landscape and coffee plantations of Cajamarca in the northern highlands of Peru. With 400 members spanning across Jaén and San Ignacio, this year's coffee is the combined lot of five producers from in and around San Ignacio. This Reserva lot is the highest scoring lot to come out of the region this year. This coffee was sourced in partnership and traceability with Caravela Coffee.

You might have noticed some lovely new faces in the cafe. We have an amazing team ready to serve you and can't wait to meet you. First we'd like to introduce you to our rock star manager, Anabel Crespo.
Anabel has a curious and adventurous spirit. She seeks out experiences that will widen her perspective both creatively and professionally.
Anabel has worked and lived in several different places from New York to Miami and now Chicago! She has worked in almost every area of hospitality from dishwashing to managing. Her last four years have been happily spent exclusively in the coffee industry making drinks and later overseeing the work of truly amazing individuals. Maybe you noticed a new sweet, juicy, and satisfying flavor to the espresso. That's because we've changed it up! We've switched from Olympia's (https://www.olympiacoffee.com/) Big Truck to their Sweetheart and we're really excited about the results! Not that there was anything wrong with the award-winning Big Truck, we were just ready to switch it up for the season. Flavors of berry, maple syrup, and chocolate
Sweetheart Blend is Olympia's effort to create the best-tasting blend of coffees sourced with the highest ethical standards. Olympia's Sweetheart program, a result of their broader Fair For All (http://fairforall.coffee/) sourcing standard, focuses on this "missing middle" within the specialty coffee sector by identifying top-tier offerings in this range and making purchases that create a sustainable production model for their sourcing partners and everyone involved in the supply chain. The coffee picker, processor, landowner, dry miller, exporter, and importer can earn a sustainable and fair wage, and we get to share their hard work with you. This version of Sweetheart is a blend of coffees from Ethiopia and Colombia. The Ethiopian coffee is a naturally processed micro-lot from Chelchele bringing in the sweetness and fruit flavors, balanced with mellower chocolatey flavors they blended in Colombian coffees from Tolima.

We were so proud to participate in the Caffeinate the Caretakers program, providing free coffee to caretakers on the front lines of the pandemic.
