Crunchy Roasted Chickpeas
Preheat oven to 400.
2 cans chickpeas, drained and rinsed
3 Tbsp extra-virgin olive oil
Coarse salt
Spices- cumin, paprika, pepper
Toss chickpeas with oil. Spread on baking sheet and roast for 45 min, stirring occasionally. After removing from the oven toss with salt and desired seasoning. Store cooled chickpeas in airtight container up to 1 week.
