Paley debuts in the heart of Hollywood, a legendary neighborhood currently undergoing a renaissance. An all-day dining destination inspired by the classic gathering spots of old Hollywood, Paley reimagines that creative culture for the modern era, with entertainment executives mingling alongside artists, designers and tech entrepreneurs.
At Paley, global hospitality group Plan Do See brings their signature Japanese principle of Omotenashi — selfless service with a spirit of warmth and respect — to California. Paley is named in celebration of the artistic and innovative era shaped by Columbia Broadcasting System (CBS) C.E.O. and progressive visionary William S. Paley and his wife, Babe.
Chef Greg Bernhardt (Church & State, LudoBites) serves a menu of dynamic and modern California cuisine with influences from L.A.’s multicultural heritage. At dinner, dishes include whole grilled radicchio with burrata, sauce vert and hazelnuts; Ash Roasted Chicken for Two; Okinawa Potato Ravioli with truffle, egg yolk and mushroom broth; and Manhattan Steak, dry aged with pommes aligot and torpedo onions. Cocktails highlight seasonal ingredients and accompany an extensive, global wine list with an emphasis on California producers.
The design, a collaboration between Plan Do See and local firm Bishop Pass (Maude, Dia de Campo, Michael Mina Group), evokes Hollywood’s early radio roots and incorporates elements of the historic 1930s landmark building, with a distinctly contemporary edge. The building, which was designed by acclaimed architect, William Lescaze and built to house CBS Studios, was originally the site of Nestor Film Company, Hollywood’s first movie studio. Details such as a perforated metal wall dividing the main dining room and wine room call to mind early microphones from the 1930s and ‘40s, and are juxtaposed with concrete columns and a sleek, white marble chef’s counter.
The 245-seat restaurant features distinct dining areas meant to be enjoyed throughout the day, including outdoor seating overlooking a sculpture plaza with six Dustin Yellin “psychogeographies” – glass and steel-encased collages – on display. Inside, guests are greeted by the elegant bar with lounge seating, an intimate dining area at the core and a chef’s counter and chef’s table beyond, overlooking the open kitchen. Mid-century modern light fixtures are interspersed with rich, brown leather seating, dark oak tables, wood tambour columns and brass accents throughout.
Paley is slated to open in early 2016, offering a vibrant setting for power lunches, after-work cocktails or a relaxed dinner with friends.
