Hellooo Fall! It’s always sad to see Summer go but nice to have a shift in cooler temperatures, sweaters and close- toed shoes, baking, gathering by the fire, and warming comfort foods. Talking warming foods… we love this healthy Shepherd's Pie. It’s creamy, comforting and the perfect tasty twist on the classic American casserole dish!
Sweet Potato Shepherd's Pie (serves 8)
Ingredients:
2 lbs Organic Grass-fed ground beef
2 tsp Himalayan salt (divided)
½ tsp black pepper
1 tsp garlic powder
1 tsp basil
1 tsp oregano
¼ tsp cayenne pepper
1 medium onion
1 small bunch kale
1 bag frozen mixed vegetables
4 medium sweet potatoes (cooked)
1 egg
4 TBSP butter
Instructions:
1. In a large skillet, brown the meat.
2. Mix in 1 teaspoon of the salt and all remaining seasonings and transfer to a large bowl.
3. Dice the onions and tear the kale into small pieces.
4. Sauté the onion and kale in the skillet until slightly soft and add to the meat.
5. Pour the mixed vegetables into the skillet and heat on low heat.
6. While the vegetables are heating, mash the cooked sweet potatoes with butter and the remaining salt until smooth.
7. Add the mixed vegetables and the egg to the meat and stir to combine.
8. Pour the meat/vegetable mixture into a 9x13 baking dish and spread the mashed sweet potatoes over the top.
9. Bake at 350°F for approximately 30 minutes.
10. Take out of the oven and let cool for about 10-15 mins before cutting. Dinner is served!

Ingredients:
1 Tbsp Avocado oil
1 lb Organic boneless skinless chicken breasts, cut into 1-inch pieces
Salt and pepper, to taste
3 cloves garlic, minced
2 cups broccoli florets
1 red bell pepper, julienned
1 cup sugar snap peas
1/2 cup carrots, julienned
1/3 cup unsalted cashews
4 green onions, chopped
For the sauce:
4 Tbsp tamari (or soy sauce)
3 Tbsp all-natural Organic peanut butter
2 Tbsp honey
1 tsp. sesame oil
1 Tbsp grated ginger
2 or 3 Tbsp water
Instructions:
To make the sauce, whisk together tamari (or soy sauce), peanut butter, honey, sesame oil, and grated ginger in a small bowl. Whisk in 2 or 3 tablespoons of water, depending on the consistency you prefer, and set aside.
In a large skillet over medium heat, drizzle oil and add chicken. Season with salt and pepper and sauté until lightly browned, about 4 to 5 minutes. Add the garlic and sauté for about 30 seconds, mixing it with the chicken.
Add broccoli, bell pepper, snap peas and carrots to the skillet, incorporating everything together. Cook an additional 5 minutes, until veggies are tender and chicken is cooked through, then add cashews and green onions and drizzle the peanut sauce over top.
Mix everything together with the sauce, coating well, and cook for one more minute. Serve and enjoy!

Pull the woody stems from the herbs, and chop the leaves into small pieces.
Stuff the ice cube tray at least 3/4 of the way full with herbs.
Fill with oil to fill the rest of the way. Put the filled ice cube tray in the freezer until completely frozen.
Once frozen pop out the herb cubes and store in a glass container or freezer bag. Use when needed for your cooking!
