Dear PVR Friends,
Earlier this year we decided to list the property for sale and then COVID hit.
Booking parties came to a screeching hault.
We kept quiet. We didn’t do a lot of promoting. We just prayed that if a buyer comes along we would be prepared to close our doors after six years. If a buyer didn’t come along we would ramp up parties again within the parameters of COVID guidelines.
We did one rehearsal dinner and it broke my heart seeing everyone in masks for their happy occasion but in this life you bend and adjust.
We adjusted to life as new restaurant owners in
2015 then bent or transitioned the business to Pinnacle Valley Receptions in 2018. Many of you journeyed along with us.
In 2020, the year of COVID and all of the frustration and worry it has served all of us, God has comforted my heart to remember loving people is never confined to the interior of a building and He prepared me to let go.
So many of you know how much I loved PVR.
She became my second child to nurture and care for as she grew. She became another reason to not let cancer beat me. She was a place to celebrate special moments and see friends and families embrace memories in the making.
What a joy to witness!!!!
I know now just how important it is to
lean on God in opening, operating, and yes even in closing a business.
A buyer did come. We sold the building Friday Sept. 25.
As I continue to let go I wanted to thank you for trusting us to serve you. Thank you for your love and support.
Thank you for your kindness.
You served us, you fed us, every time you walked through our doors.
We no longer have a brick and mortar but should you need anything...reach out!! I’m mobile now. 😉
We are keeping a lot of our catering supplies and decor items so we can serve folks for fun wherever and whenever our friends gather.

Are you cooking? How’s it going?
I enjoy the break from my home kitchen that restaurants provide but continuing to cook at home is a priority.
I know what’s in the dish. I know how the dish was prepared. I control the amount of salt. Etc...
I think when we make a mindful decision to “just do it” focus and effort kicks in. As my Mom always says, “Cook with love and it comes together.” Like life... do it with love and you can’t go wrong. You can’t mess up. 😉😊 Love IS the recipe.
Let’s have that mindset in our kitchens.
But cooking is not without challenges. I know.
I have my go to dishes and as a result I can get in a rut. I enjoy finding new recipes but experimenting as I go with a dish on the fly is fun.
One of my best action plans is to begin with leftovers.
Yes, leftovers. Don’t be afraid! We need them.
There’s a life lesson in leftovers! Haha! Yes!

With leftovers you’re not cooking every day....unless you choose to, like to, or have time to.
Don’t begrudge “leftovers” Leftovers are your friend!!!
This week I did my usual. I started with 2 main dishes knowing what leftovers I had in the refrigerator first then I planned 2-3 meals from there. I choose to not cook everyday. I’ve got a 7 year old I want to play with and a second business I’m starting. I love time in our yard too.
So leftovers are indeed my friend.
Before you go to the store “shop” your refrigerator first. Like an artist you can be creative...have fun!
My week started with a Meat dish and a chicken dish. The meat, ground beef, led to tacos. I added leftover corn I had in the refrigerator. I’m always pulling what I have from the refrigerator first.
Owning and operating PVR taught me how much I despise waste.
The chicken was used for chicken and rice and chicken salad...lunch for two days.
Leftovers offered pork loin. The extra rice from the chicken and rice dish was a nice side with the pork. And I’m always including veggies. More fruit for lunch and veggies for dinner... there’s a reason why... less sugar intake close to bedtime. Half of the veggies are raw for my daughters preference. Half are steamed for my husbands preference. Easy enough. The experts say stretching is good for us.... yep. Stretching IS good for us especially in the kitchen. 😉😉
Cooking can be challenging. Perhaps time isn’t flexible.
Eating out gets expensive.
Meal prep kits delivered to your door but one meal or five then it’s time to reorder.

Lemon pie...made me think of Summer!
Chicken casserole...such a comfort dish! Warm, filling, super tasty. Great out of the oven AND as a leftover dish. Easy to change up too. Easy to turn into, for example, a Mexican dish, the next night. Two meals from one dish.
I usually make chicken pot pie with pie shells but this time I tried biscuits. Fun. Easy. Tasty.

So we’ve always done a big blow out birthday party for our daughter. With COVID things were different this year but I must admit...it was a memory maker regardless of the minimal decor and a lemon pie (it is her favorite dessert) vs my traditional themed homemade cake. It was simple. It was special. No stress for this Mom that loves to address all details. I got to enjoy. I got to be present. Friends shared birthday wishes, cards, texts, phone calls. Bottom line... she knows she’s loved. Mission accomplished. Isn’t that the point of a good party? Know you’re loved. Make special memories. Presence is the present with a side of creativity😉.
