Green Chile-Cornbread-Piñon Stuffing is a must try if your looking for something slightly different this year.
Ingredients
• 1 large onion, chopped
• 1/4 lb butter
• 1 cup chopped roasted and peeled New Mexican green chile
• 1 cup finely chopped celery
• 6 cups coarsely crumbled cornbread
• 1 cup whole piñon nuts
• 2 tsp dried thyme
• 1+ cups chicken broth
Instructions
1. Melt the butter in a saucepan and saute the onion until it’s soft, about 5 minutes.
2. In a large bowl, combine all the ingredients except the broth and mix thoroughly with a wooden spoon.
3. Add enough broth to moisten, but not saturate, the mixture.
4. Mix the stuffing again. Stuff the bird and roast as you usually do.
Yield 8 Cups

Easy OREO Truffles
1 16oz package OREO chocolate sandwich cookies.
1 8oz package Cream cheese softened
2 8oz package semi sweet baking chocolate
Crush all the cookies in a food processor, if you do not have a food processor a zip lock bag and rolling pin will also work. You are wanting fine crumbs for this recipe; place the crushed cookies medium bowl. Add cream cheese; mix until well blended. Roll cookie mixture into 42 balls, about 1-inch in diameter and place on a cookie sheet lined with wax paper. Place in freezer to chill about 15 minutes.
Melt the chocolate according to package directions. Dip each chocolate ball in the melted chocolate and place back on the cookie sheet. Once all covered in chocolate, place them back in the freezer to chill once more about 5 minutes. Place in air tight container and keep frozen until ready to eat or can also be stored in the refrigerator.
Refrigerate until firm, about 1 hour. Store leftover truffles, covered, in refrigerator.

From the kitchen of Nanny Pino, we present to you Tunnel Fudge Cake in celebration of National Chocolate cake day 01/27/20.
bake at 350 degrees
1 ¾ C. Sugar
1 ¾ C. Soft Marg. Or Butter
2 C. Powdered Sugar
2 1/4 C. Flour (3+ T over 3500 Ft)
¾ C. Unsweetened Cocoa
2 C. Walnuts
Glaze:
¾ C. powdered sugar
¼ C. Cocoa
1 1/2 -2 T. milk
Heat oven to 350. Grease and flour 12 C bunt or 10 inch tube pan. In large bowl combine sugar & margarine and beat til fluffy. Add eggs 1 at a time, beating well after each. Gradually add 2C. Powdered sugar; blend well. Lightly spoon flour into measuring cup; level off. By hand, stir in flour and remaining cake ingredients until well blended. Spoon batter into greased pan, spread evenly. Bake 350 for 58-62 minutes. **Cool completely. Drizzle glaze over cooled cake.

1 Tsp Cinnamon
1Tsp Sugar
Instructions:
1. Cut your biscuits into quarters and heat oil in a pot on the stove.
2. In a separate bowl combine sugar and cinnamon.
3. Test one donut hole in the oil to see if it is hot enough to cook the donuts. If hot enough add a few at a time. Cook on each side for 40-50 seconds.
4. Once cooked place the cooked donut holes in some paper towels to drain excess oil. Before cooled place in Cinnamon and sugar mixture.
Eat and enjoy!

National Peanut Butter lovers day! Give these sweet treats a shot from the kitchen of Nannie Pino.
Peanut Butter Balls
½ C creamy peanut butter
3T. butter softened
1 C. powdered sugar
8oz Chocolate candy coating
Stir together peanut butter and butter. Gradually add sugar. Stir until combined. Shape into 1 inch balls. Place on wax paper and let stand for about 20 minutes. Melt chocolate according to directions (Microwave or double boiler) Dip balls into coating and let excess coating drip back into pan. Place on wax paper and let stand until coating is firm. Makes 30 pieces. Store in refrigerator.

St. Patrick’s Day muddy buddies
Ingredients:
4 ½ cups checks rice cereal
½ cup white chocolate chips
¼ cup peanut butter
2 Tablespoons butter
1/3 cup powdered sugar
¼ cup green candy coated chocolate candies.
¼ cup lucky charms cereal marshmallows
Green food coloring
Directions:
Place rice cereal in a medium sized bowl and set aside.
In a small microwavable bowl, add in white chocolate chips, peanut butter and butter. Microwave on the melt or defrost setting until well melted, be sure to stop and stir the mixture to ensure it melts evenly.
Once melted pour over the rice cereal, stir until evenly coated.
Place half of the cereal mixture in a sealable storage bag and add the powdered sugar. Shake until evenly coated and spread on a baking sheet to cool.
In the other half of the cereal mixture stir in green food coloring until the green you prefer is achieved. Spread the cereal out on another baking sheet.
Once all cooled and dry mix both sheets of coated cereal in an air tight container adding in the chocolate coated candy and the marshmallows.
If you've got young kids, you may already be thinking about future costs, like college. One tip I wanted to share: once they're done with child care, consider dedicating those child care costs to education savings.

Medium or large bin like a plastic shoe container
Shaving Cream
Plastic gold coins
Other small items like Lego’s, beads, noodles.
Glitter (optional)
Bowl of clean water
What to do:
Place the plastic coins and any other small item in the bin.
Cover with shaving cream and sprinkle the glitter.
Have the children take turns fetching one item out of the bin at a time. Before they bring their hand out of the bin, see if they can guess the object.
