Did you know there are literally over 100 different types of kimchi??

You can make kimchi out of any veggie, even watermelon rinds!
•
For my Thursday Live I’m gonna make one of my favorite kimchi recipes: 깍두기 (kkakdugi) which is made with Korean Radish.
•
Here’s what you’ll need to follow along:
🌱3 medium to large Korean radishes about 6.5 pounds
🌱1/3 cup coarse sea salt
🌱3 - 4 scallions cut into about 1-inch lengths
🌱2/3 cup gochugaru 고추가루,Korean chili flakes
🌱1/4 cup saeujeot 새우젓, salted shrimp
🌱2 tablespoons myulchiaekjeot 멸치액젓, fish sauce
🌱20 cloves garlic
🌱1 inch piece ginger
🌱1 Apple blended

Before you meet me LIVE, prep the radish by washing and removing any dirt from the peel. Cut them into 1in cubes and toss them in salt. Let it sit for 30-40min to soften.

Paleo Rolled Pancake

Here’s what goes into the rolled pancakes I posted in my recent reel:

🥞Almond flour 1c
🥞Sweet potato flour 1/3c
🥞Eggs 2
🥞Vanilla 1 tsp
🥞Salt pinch
🥞Coconut milk 1/4c
•
Mix well
•
Pour a thin layer of batter into a small pan lightly greased with avocado oil
•
Cook for 2-3min or until bubbles form and flip to cook other side for another 1min
•

This month is National Breastfeeding Month
•
This was a hard post for me to write about because I struggled so much with nursing Koa.
•
Knowing so much about health and how vital it is to breastfeed babies to help boost their immune and influence their growth and development, I put a lot of pressure on myself to meet so many expectations especially when it came to breastfeeding.
•
Knowing what I knew, prevented me from looking for any other options when the struggle was unbearable.
•
I held to this rigid belief that no matter what, including 6 bouts of mastitis and countless clogged ducts, I couldn’t prevent my newborn from my milk.
•
Looking back, I realized how alone I felt through this journey and how little I knew about being a mom let alone breastfeeding.
•
As I started writing this post, I just wanted to share my story with other moms or moms to be not to make it sound like breastfeeding was a bad/ negative experience but that everyone’s experience is their own.
•
Also that breastfeeding is a choice and no matter what way you choose to feed your baby, we can support each other through this journey of caring for and nourishing our babies.
•
🚫No more shame, “mom” guilt or judgement.
•
💕Only love, support and compassion.
•

Mondays don’t have to be dreadful...
•
I used to hate Mondays like the rest of us and feel like it was sheer punishment to only have 2 day weekends.
•
I just wanted to relax and not have to do anything...well anything I didn’t want to do.
•
Once I started realizing what it is I actually wanted that I enjoyed, it changed my whole perspective on life.
•
Seriously. Just 𝘬𝘯𝘰𝘸𝘪𝘯𝘨 what I actually wanted and what I liked doing made all the difference in how I showed up to get things done.
•
We don’t need motivation when it's something we love doing.
•
So Mondays became less about the day of the week and more about wanting to do more of what I love every day of the week.
•
So to all my Monday haters, I 𝐜𝐡𝐚𝐥𝐥𝐞𝐧𝐠𝐞 you to add something you genuinely love doing on Monday (and only Monday) so you have something to look forward to rather than feel dreadful about!

Paleo Triple Chocolate Cake
•
1 1/2c almond flour
1/4c sweet potato flour
1/4c cocoa
3 eggs
1/4c oil
1 tsp baking soda
2tsp Apple cider vinegar
2tsp vanilla
Pinch salt
•
Mix everything well and pour into greased pan.
•
👩🏻🍳Insider’s Tip:
If you don’t have a Bundt Cake pan, just use any round on and roll up a ball of foil to put in the center or even a heat proof cup or small bowl.
•
Bake at 350F for 20-23 min or until you poke it with a fork or knife and it comes out clean.
•
Remove cake from oven and let cool completely before decorating however you want!
•
