Porgy (aka Bream) belongs to the Sparidae which includes over 100 species. By New York you’ll find Northern Scup really all year round with higher catch rates through the end of summer and beginning of fall (the open season)
These fish are DELICIOUS and unpretentious. Despite their bones, the fish beats any whitefish in our book and pairs well with salads and in sandwiches. Unlike most whitefish which will tend to get fried for added flavor, Porgies have a lot of natural oils and a rich, sweet notes on their own - FLAVOR BY NATURE 🌱
- just pan sear these babies or throw them on the grill and you’re good to go.
Porgies are the success story for conscious fishing and dining. Demand for this fish has increased 5x in the last 20 years, now being sold at Whole Foods, Lobster Place, and other local fish markets around NYC!
