How old were you in the picture your mom sent and how old are you now ? In the picture I had just turned 14, and I’m now 17. When did you realize you wanted to be a cook? I realized it around when quarantine started, back in April. What drove your desire for cooking? I think what drove me to cook was that nothing ever fascinated me as much as cooking. It’s such an endless world to explore and always learn from, and I could never think of another thing that fascinates me in the same way food does. At what age did you become an apprentice under Chef Daniel? I started shadowing chef when I was still 14. What have you learned at your time here under Chef Daniel? I have learned more things than I can count in just three months of working part time; in terms of food, I understand how to better treat ingredients and prepare them, I’ve learned all kinds new techniques and flavors for making dishes. But more importantly I’ve learned life lessons that have truly stuck with me: I understand that experience is the only way to advance in the career I pursue, and that failure is the greatest teacher to ever exist. We are proud to have you here Carson! And glad that you have found fellowship and mentorship with Chef Daniel and his staff.
