VANILLA MAPLE ROASTED CHICKEN
This vanilla maple roasted chicken brings a twist to a classic Sunday meal. Floral vanilla, sweet maple, and bright orange help bring out the savory and umami flavors of this juicy roast chicken. The perfect recipe for a weekend dinner with family. Bring the flavors of fall alive with this recipe!

Prep Time: 30 minutes - Cook Time: 60 minutes - Total Time: 90 minutes

Ingredients:
- 4lb Chicken
- 1 Tbsp Rosemary Sea Salt
- 1 Tbsp Maple Orange Sugar Shaker
- 1 Tbsp Vanilla Maple Olive Oil
- 1/4 Yellow Onion
- 1/4 Large Orange
- 3 Sprigs Thyme
- 3 Springs Rosemary
Glaze:
- 1/4 cup Cranberry Spice Balsamic Vinegar
- 1/2 tsp Fresh Rosemary, minced
- 1/2 tsp Fresh Thyme, minced
- 1 tsp Maple Orange Sugar Shaker

Instructions:
Preheat oven to 450F.
In a small saucepan combine ingredients for the glaze and cook over medium heat for about 5-7 minutes to let the flavors infuse. Set aside.
Pat chicken dry and season the chicken all over with salt, shaker, and olive oil. Make sure to use your hands to gently loosen the breast skin and season the meat under the skin as well as inside the cavity.
Stuff cavity with onion, orange, thyme, and rosemary. Place chicken in a dutch oven or roasting rack breast side up. And cook at 450F uncovered for 20 minutes to obtain color on the skin.
Remove chicken from oven and reduce the temp to 350 F. Meanwhile brush the skin with a layer of glaze. Reserving glaze foer.
Place the chicken in the oven at cook for 20 minutes uncovered for every 1lb. If skin starts to darken to much cover with lid or foil.
Every 15 minutes remove the chicken from the oven to reapply the glaze until its gone.
Remove the chicken from the oven when the thigh registers 155F and let rest until the internal temperature reachs 165F. About 15 minutes.
Serve chicken with your favorite sides and enjoy!
BOURBON SWEET POTATO GRATIN WITH A BACON PECAN CRUMBLE

Ingredients:
- 3 Yams, peeled and sliced thin
- 1 Tbsp Cumin Spice Sea Salt
- 2 Tbsp Sweet Cream Butter Olive Oil
- 1 Onion, diced small
- 2 cloves Garlic, minced
- 3 Tbsp Bourbon, chilled
- 1 1/2 cups Half & Half
- 1 Tbsp Roasted Coffee Rub
Crumble:
- 1/4 cup Sweet Cream Butter Olive Oil
- 1/4 cup Maple Syrup
- 1 Tbsp Bourbon
- 1/2 cup Flour
- 1 cup Pecans, chopped
- 1 cup Bacon, crumbled (slightly undercooked)

Instructions:
Preheat the oven to 350°F.
Arrange the yams in an 8x8 baking dish. Season liberally with cumin spice sea salt and set aside.
Heat the olive oil in a large sauté skillet. Add the onions and garlic and cook until soft.
Deglaze the pan by adding the cold bourbon and allow to cook-off. Add the half & half and roasted coffee rub and cook until hot and bubbly, about 5 minutes. Pour the hot mixture over the yams and set aside.
Make the crumble by combining all of the crumble ingredients and stirring together with a fork.
Scatter the crumble atop the yams and transfer to the oven.
Bake until the yams are cooked throughout, 40-45 minutes.
Serve warm and enjoy!
MAPLE ORANGE CRANBERRY SAUCE
The flavor of Maple and Orange complements the tartness of cranberries to create a delicious sauce in this recipe. Once you see how easy this sauce is to create, you'll never use canned cranberry sauce again!
Prep Time: 10 minutes - Cook Time: 15 minutes - Total Time: 25 minutes
Yield: Makes 9
Ingredients:
- 1½ cups fresh or frozen Cranberries
- ½ cup orange juice
- ½ cup brown sugar
- 2 tsp Maple Orange Sugar Shaker
-¼ cup Cranberry Spice Balsamic Vinegar
- ¼ tsp Vanilla Bean Sea Salt
Instructions:
In a saucepan, combine all ingredients except sea salt. Cook for 15 minutes on medium heat.
Use a potato masher to break apart cranberries as they cook down. Sauce is done when juices have evaporated and sauce has thickened.
Finish with sea salt before serving.
