(Recipe of the Week) Zesty Lime Shrimp and Avocado Salad, a light and refreshing salad that requires no cooking! Serve atop some greens as a salad, wrap in a jicima wrap or cassava/almond flour wrap, or enjoy as-is! Zesty Lime Shrimp and Avocado Salad (via: https://bit.ly/2FT8PL3 ) INGREDIENTS 1/4 cup chopped red onion 2 limes, juice of 1 tsp olive oil 1/4 tsp kosher salt, black pepper to taste 1 lb jumbo cooked, peeled shrimp, chopped* 1 medium tomato, diced 1 medium hass avocado, diced (about 5 oz) 1 jalapeno, seeds removed, diced fine 1 tbsp chopped cilantro INSTRUCTIONS In a small bowl combine red onion, lime juice, olive oil, salt and pepper. Let them marinate at least 5 minutes to mellow the flavor of the onion. In a large bowl combine chopped shrimp, avocado, tomato, jalapeño. Candied Apple Wedges (via: https://bit.ly/2TPzYSB) Ingredients: 1 Apple Cored (Granny Smith, Honeycrisp, or Pink Lady) Natural Nut Butter of Choice (Almond, Pecan, Peanut, Cashew) Toppings of choice (shredded coconut, cacao nibs, sliced almonds, mini chocolate chips, granola, sunflower seeds, chia seeds, flax seeds, raisins, dried cranberries, mini dark chocolate chips, pumpkin seeds) Directions: Core and slice apple. Dip each wedge into nut butter then topping of choice. Serve in a pinwheel on a serving platter. Mix up your chicken routine with the fun, fresh flavors of this dish. Slow Cooker Jerk Chicken Cauliflower Rice Bowl (via: https://bit.ly/38kMB03) Ingredients Jerk Mixture: 3 Teaspoons ground thyme 1 Tablespoon crushed rosemary 2 Teaspoons ground allspice 1 Tablespoon ground ginger 1 1/2 Tablespoons salt 1 1/2 Teaspoon ground cinnamon 1 1/2 Teaspoon ground nutmeg 1 1/2 Teaspoon smoked garlic powder 1 1/2 Teaspoon paprika 1 Teaspoon turmeric 1 Teaspoon onion powder 1 Teaspoon ground black pepper 1 Teaspoon red pepper flakes (more or less, to taste) Chicken/Other Ingredients 4 boneless chicken breasts 1/2 cup olive oil 6 bay leaves 1 lime, sliced Extras: cauliflower rice, extra lime, avocado, cilantro, jalapeño (optional), mango (optional) Instructions Combine Jerk Mixture, above, in medium bowl. Add olive oil and mix thoroughly. Place chicken in medium bowl and pour Jerk Mixture on top. Mix to allow Jerk Mixture to coat the chicken. Place 4 slices of lime on the bottom of the crockpot. Place chicken on top and ensure to use spatula to get all of the Jerk Mixture into the crockpot as well. Add by leaved to the crockpot and cover. Cook on high 3 hours or on low 6 hours. Shred when done. Serve over cauliflower rice with avocado, cilantro, lime and mango (optional). Or serve as a taco with the same toppings.
