Easy...quick, delish. A great way to get a variety of vegetables in one dish is a frittata. I used carrot, zucchini, mushrooms onions green bell peppers broccoli, tomato, garlic and onion. Five eggs and now I cut and portion like a pie. ( I have to confess, I did put in 3/4 of a cup of shredded Monterey Jack cheese. I used my cast iron pan, preheated with avocado oil spray. Sautéed my veggies. The. Topped with the chees and poured the eggs in together. Fold together so everything is even toy coated and toss in the oven set to 400 degrees. When I was young they said don’t play with your food. Now as an adult I try to play with my food so making the right choices are as fun as they can be and delicious. Tonight’s meal is an Asian inspired ground pork. With sautéed cabbage, garlic, and carrots. 1/4 cup of rice is covered by chopped mixed greens topped with pork.
