So many people have fallen for the ever popular outside skirt and don’t get me wrong OUTside skirt is OUTstanding, but the inside skirt is pretty incredible too plus more affordable and I am definitely a #frugal person! . . . The inside skirt is the transverse abdominis muscle. It literally extends across the abdomen and helps hold the big heavy rumen up in cattle! That rumen can easily hold over 25 gallons of content in it at a time!!! That is a lot of heavy lifting that inside skirt has to do!! But the big debate is it a T-bone or a Porterhouse?!? Only 25% of people guessed porterhouse! How do we know? . . . T-bones and porterhouses come from the same sub primal, the short loin. T-bones are cut closer to the head (#anterior ) while porterhouses are cut closer to the tail (#posterior ). The measurement that matters is the width of the tenderloin. According to the meat buyers guide the tenderloin must be at least 1.25 inches from the bone to the widest part of the tenderloin. This one is close to 2 inches. . . . Most grocery stores use that measurement to determine if it is a t-bone or a porterhouse but if you are a chef, be sure to check with your cut shop so you know exactly what you are getting! Without a doubt the most tender cut in the carcass. Many know this as a tenderloin filet typically served boneless. But this bone in tenderloin is something that will wow any guest! . . . Now I ask does the bone add flavor?!? The answer is no! Blind taste panels have been held with consumers to see if they can distinguish a difference between a bone in and bone less cut and they could not!! Now I will say the bone does act like an insulator so someone who is prone to over cooking their steak the bone may help them have a juicier experience, but the bone itself is not pushing out any flavor. A classic bone in rib (export rib). Some may call this a prime rib but I find that name WAY to confusing. The only time I will call a raw piece of meat a prime rib is if it in fact graded USDA Prime, otherwise I save that term for a cooked rib seasoned, roaster and sliced (#soapbox ) This is the chuck end (#anterior ) of the rib meaning this surface connects to the chuck roll. . . . A rib consists of 7 rib bones, number 6-12. Most cattle have a total of 13 ribs per side meaning 5 ribs can be found in the chuck and 1 in the loin. . . . Does anyone know what takes place at the 12th rib?
