In 2010 my nephew was diagnosed with celiac, a condition that makes it hard to digest wheat products. We would have several family get together and it became hard to get new gluten free items for all of us to try and help him with his transition. So my wife told me to stop complaining and just make some Gluten free bread! And I did.. When the family got together the next time and I gave them the bread everyone was amazed at the flavor, texture and consistency. Seeing the happiness I brought my nephew I wondered if I could do it in a larger scale and help others with it. Since then I have came up with several different versions of bread, cookies, macarons and other baked items. I hope my efforts can help those with celiac and maybe help those who are curious to try it out.
