My friend Lucas Abihaggle introduced me to a winemaking couple, Matilde and Augustin, who were making incredible small-production wine. The style at the time was to make very modern wines and it was pervasive in the area-- but here they were making something with a far older soul: a Bordeaux style blend that was elegant & refined. They were pioneers in the area for using Cabernet Franc so deliberately. They have this wide view of the world and their wines and they put all of that into small batches. Mangalica, this Old World breed pig is indigenous to Hungary. Its name means “hog with a lot of lard” and is pronounced mahn-ga-leets-ah. Not only does the Mangalica pig have a lot of lard, it has a lot of curly hair which makes it resemble a sheep. The fleece can be black, or red, but is most commonly blond. The Mangalica is the last pig in existence to sport this unusual fleece, and it was nearly lost to extinction by the 1990s, when fewer than 200 pigs remained in Hungary.

One of the most iconic and revered wines of Spain, if not the world of wine itself, is helmed by two sisters: Maria Jose and Mercedes, the General Manager and winemaker respectively. Lopez de Heredia, founded in 1877, is a living preservation of history that you can drink and, as neighboring bodegas may selectively modernize, this one does not-- instead leaning into decades of craftsmanship and doing it “the hard way” because of what it means to every bottle. "López de Heredia will never change its approach, for two reasons," answers Maria José. "Firstly, our customers constantly tell us that they like our historical approach to Rioja production and the resulting wine style it gives. Secondly, we don't desire change; we like the results of what we do."
