Hey all, Fall has arrived and with it, soup! Our roasted winter squash soup has become a little noted in the area having been featured at the Stone Soup event marking the close of the farmers market the last couple years. Our first batch this season is made with a special variety of squash called Chiogga de Marina. An Italian pumpkin with an incredible depth of flavor. Come get some, it's the best batch we've made, in my opinion.

Our pasture raised turkeys cook very quickly, perhaps twice as fast as conventional turkeys. So when your half bird is comfortably at 150f in under an hour, its probably not a space/time worm.

Tonight we ordered dinner from 3 D's Jerk Chicken. At Thanksgiving, Carnivore's staff works hard, 14 hour days to make sure your Thanksgiving order goes smoothly. Each night the shop buys dinner for the staff. Tonight we spent $100 to feed 12 people and these are the leftovers from our Jamaican style buffet. Too good a deal to miss. The place to be is 3D's. Incredible jerk. The oxtails hurt my feelings. Beautiful goat and the best jerk paste of my life, on a personal note. Go see them. 5317 w North Ave, Chicago Illinois. I'm rarely this impressed.

This one is decidedly more upscale but we promise we took all the difficulty out of it.
First course: seared scallops, Belgian endive, citrus vinaigrette, Romesco sauce
Second course: braised short rib, local polenta, porcini, broccolini and jus
Dessert is a French Silk Bar. It's to die for.
You get the par-cooked ingredients, ready to be finished at home, and instructions to cook or reheat as needed. Its easier than it looks.

If you're cooking your own, do what we do. 3/4% brine to cover your Corned Beef, bring to a summer on the stove, finish in the oven @300 degrees until it's 195 degrees internal temperature. Easy Peasy.
