There once was a time, it seems like so long ago now, that you could pull up a chair in front of your favorite chef or bartender and regale the night away as they crafted you delicious concoctions. ⁠ ⁠ Piece by piece you’d learn more about them, even more so now it feels important to learn about the faces behind the masks. So, we thought we’d start a little series called “a seat at the bar” to learn just a tidbit more about each of our wonderful team... until one day you can pull up your own seat again. Of course we begin with the man the myth the legend himself... Our head chef Iwasan.

As the weather gets colder and dining becomes more and more of an indoor activity, we want to share with you some of the extra steps we've taken to keep our guests and team as safe as possible. ⁠ ⁠ We installed one of the best commercially available air ionization & filtration systems throughout our entire building (which also includes our favorite neighbors to the south @thesundownsaloon) killing 99.4% of COVID and other particles in the air within 30 minutes. We also have easily recognizable hand sanitizing stations positioned in 5 places throughout the restaurant. Finally, we've rearranged our dining room to exceed recommended social distancing between tables (also meaning your closest neighbor will be bamboo). Outdoor dining on our heated patios will remain open throughout the season as well!⁠ ⁠ We take the safety of our community seriously, and will continue to take steps and precautions to keep ourselves and our guests healthy.
There's nothing like steamy soup on a cold day, and our Udon Soup is guaranteed to hit the spot! Fresh seafood, Udon noodles and our spicy dashi broth will warm you right up on even the chilliest of days.
The response of Boulder restaurants rallying around our community in a time of need has brought us to tears more than once these last few days. It has been sobering to say the least seeing our friends houses lost and we’d love to follow the lead of @bigredfrestaurants @picasboulder @curedboulder and any others we haven’t seen yet to offer meals for those displaced by the #calwoodfire and #lefthandcanyonfire For anyone who is evacuated or has unimaginably lost their home to these fires, call for Togo or join us between 3 and 5pm for long as the fires are keeping you from home. We’d love to provide you with an assortment of sushi, seaweed salad, miso... and certainly a beer, lots of love and a friendly ear if you could use it ❤️

One of our most popular rolls is the Cactus Roll. 🌵 Made from tempura Fried Serrano Chiles stuffed with Spicy Tuna and Cream Cheese, then topped with Nitsume, Sweet Mayo and Sriracha- this roll has got a combination of sweet, spicy, and tangy flavors! Is there anything more glorious than a sunny fall day in Colorado? The light is warm, the air is crisp, and saturation seems to be turned up to 100. Today may not be one of those days, but the forecast says that we'll soon be treated to a week of sunshine and temps in the 60s. Beginning tomorrow, you can choose from over 20 varieties of loose leaf sipping goodness including oolong, herbal, fruit, and various black and green tea options. Happy #meatlessmonday friends! 🌿 Over the years, we've had a fair share of vegetarians join the fampango which means plenty of creative herbivore-friendly versions of our Rolls have sprung up over the years... many of which more than stand up to the originals! Our menu already includes a plethora of meat-free options, but pictured here, are our 2 favorite vegetarian adaptations— the Hanami and Aquaman Rolls. 🤤 The Hanami Roll comes with Tempura Asparagus, Cucumber and Avocado inside, and is topped with Plum Paste, Spiced Onion, Truffle Ponzu and Scallions.
